Ingredients

  • 2 T. olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 lb. ground beef
  • 1/2 lb. ground Italian pork sausage
  • 3 to 4 zucchini, quartered and sliced 1/2-inch thick
  • 26-oz. jar spaghetti sauce
  • 14-1/2 oz. can crushed tomatoes
  • 6-oz. can tomato paste
  • 1/2 c. water
  • 1/2 t. dried basil
  • 1/2 t. dried oregano
  • 1/2 t. garlic powder
  • salt and pepper to taste
  • 8-oz. pkg. shredded mozzarella cheese
  • 3 c. elbow macaroni, cooked

Preparation

Step 1

Add oil to a skillet over medium heat. Sauté garlic and onion until tender, about 5 minutes. Add beef and sausage; cook until browned. Drain; add zucchini, sauce, tomatoes, tomato paste and water. Cover and simmer for 10 to 15 minutes, until zucchini is tender. Add seasonings; top with cheese. Serve over macaroni.

Serves 6 to 8.
