  • 1 egg, beaten
  • 1 slice whole wheat bread, crumbled
  • 2 teaspoons fresh rosemary, chopped
  • Salt, to taste
  • 5 ounces medium Cheddar cheese, diced into 1/4-inch cubes

Preheat oven to 450°F.

In a bowl, mix veal, egg, breadcrumbs and rosemary. Season generously with salt.

Shape small meatballs by pressing a cheese cube into a palmful of meat, and shaping with your hands into a sphere.

Arrange meatballs on a baking sheet lined with parchment paper and place on top oven rack; bake 8-10 minutes or until golden and fully cooked. Warning: do not overcook as cheese will melt and seep away.

Serve warm with marinara sauce as dip.
