Soy sauce is great in marinades for grilled meats, as it stands up to charred flavors. The simple solution would also be tasty with steaks, pork tenderloin, or pork chops.

Ingredients

  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons chopped fresh thyme
  • 8 (2-ounce) skinless, boneless chicken thighs
  • 2 garlic cloves, minced
  • Cooking spray

Preparation

Step 1

1. Combine first 5 ingredients in a large zip-top plastic bag; seal. Marinate in refrigerator 4 hours or up to 24 hours, turning occasionally.

2. Prepare grill to medium-high heat.

3. Remove chicken from bag; discard marinade. Place chicken on grill rack coated with cooking spray; grill 3 minutes on each side or until done.

Marinade is Great. I used it both for Boneless Chicken Thighs and Chicken Breasts. On the weekend I like cooking up batches of Orzo, Edemame, and Quinoa, as well as some sort of protein for quick go-to-meals. The Chicken made a nice tasty protein addition to all three.

For something so easy this was quite good. I marinated overnight, and the flavor was strong, but not overpowering. I used thyme as the recipe called for, but will try rosemary too, as another reviewer did. Will definitely make again.

For such a simple marinade, this was FANSTASTIC. I used fresh Rosemary instead of thyme. Made a double batch and used the chicken for leftovers. Everyone loved it - even hubby,and a 5 year old.

Very nice flavor to marinaded meat. I made the quick and easy marinade as directed, but used it on 2 skinless, boneless chicken breast halves that I had sliced into strips to saute after marinating. Since there was more more surface area, I only marinated the chicken about 2 hrs and 15 minutes instead of the 4 hrs called for in the directions. Served it on a green salad. I'm adding this to my "keeper" file.

I love this marinade. I used the chicken to top a Caesar salad and it was delicious. I will definitely be making this again.
