Vanilla Gelato (Base for flavors, e.g. Pistachio)

This recipe abides more by the standard Italian gelato making rules in terms of the ingredients. No eggs so it does not get that custard like texture that some of the other recipes out there have. I've tried several and this is by far the best. I added pistacio extract flavoring and green coloring to make an outstanding gelato.

Ingredients

  • 1 1/2 pints (750 ml) whole milk (full cream milk)
  • 1 cup (100g) skimmed milk powder
  • 6 oz (125g) sugar
  • 1 tsp vanilla

Preparation

Step 1

Put all the ingredients, with the exception of the vanilla (and flavoring), into a saucepan and heat gently stirring all the time. Bring slowly up to boiling point and immediately pour the heated mixture into a large mixing bowl. Add vanilla (and/or flavoring) directly into the mixture, stir and leave to cool. Can refridgerate about 2-4 hrs or overnight. When the mixture is cold, transfer it into an ice cream maker and freeze according to the manufacturer's instructions.

You can also add flavoring or nuts, etc to have something besides vanilla flavor.
