Spinach Enchiladas

Ingredients

  • 2 - Eggs beaten
  • 1 PKG - Frozen spinach
  • 1/4 C - Heavy cream
  • 1 - Garlic clove (minced)
  • 2 TBS - Salsa (medium)
  • 1 C - Monterey Jack grated cheese
  • 1/3 C - Parmesan cheese (grated)
  • 4 OZ - Green chiles
  • 7 OZ - Green chile salsa
  • 6 - Flour tortillas
  • 1 - Tomato (diced)
  • 1 C - Cheddar cheese (grated)

Preparation

Step 1

Combine first 8 ingredients and mix well. Add 2 TBS green chile salsa and place in saucepan. Warm over medium heat until cheeses melt. Fill each tortilla with 1/6 of mix. Divide tomato evenly between each totilla and fold on one iover the other. Sprinkle with cheddar and remaining salsa. Place in lower rack of broiler and broil app 10 minutes. ( Do not allow tortillas to become crisp). Top with grated onion, picante sauce, and sour cream.
