Waffles: Chocolate Waffle Bites with Peanut Butter Cream

These are definitely dessert waffles, yet they don't taste too sweet.

Ingredients
- For the Peanut Butter Cream:
- 1/3 cup creamy peanut butter
- 1/4 cup whole milk
- 3 tablespoons sugar
- 1 cup heavy cream
- Chocolate Waffle Batter:
- 1/2 cup semisweet chocolate chips or bittersweet chocolate
- 4 tablespoons unsalted butter
- 2 large eggs
- 1 1/2 cups whole milk
- 2 teaspoons pure vanilla extract
- 1 3/4 cups all-purpose flour
- 1 cup sugar
- 1/4 cup unsweetened cocoa powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt

To make the peanut butter cream, in a small, heavy saucepan over medium-low heat, cook the peanut butter, milk, and sugar, whisking constantly, until the mixture is just smooth, 1-2 minutes. Do not overcook. Remove from the heat and place in a stainless steel or glass bowl and cool to lukewarm, 5-10 minutes.
In the bowl of a stand mixer, using the whisk attachment, whip the cream on medium-high speed until peaks form, 4-5 minutes. Gently fold tin the peanut butter mixture by hand. (The peanut butter cream can be made up to 3 hours ahead. Cover tightly and refrigerate, and whisk gently before serving.) Place the peanut butter cream ina serving bowl or in ramekins.
Preheat waffle maker to medium-high.
Place the chocolate chips and butter in a double boiler and heat until melted, about 5 minutes. Whisk to incorporate. Let cool slightly. In a medium bowl, whisk together the eggs, milk and vanilla. Slowly whisk in the chocolate mixture to incorporate.
In a large bowl, mix together the flour, sugar, cocoa powder, baking powder, and salt. Make a well in the center of the dry ingredients, then pour in the egg mixture. Whisk until mostly smooth, with just a few lumps.
Ladle the batter into the waffle maker, using 1/2-3/4 cup batter per batch. Spread the batter so that it almost reaches the edges of the waffle maker. Cook until the waffles are crisp, 3-4 minutes.
Using a spatula, remove the waffles from the waffle maker. If using a waffle maker, place the waffles on cooling racks and allow to stand for 1 minute to crisp. Using a bread knife, slice the waffles into sticks 1 inch wide, and then in half, making large bite-sized pieces. Serve with the peanut butter cream for dipping.
