This has been a family favorite especially for the Thanksgiving and Christmas feasts. It is also very good at other times served sliced with butter or cream cheese.

This makes 3 loaves.

Ingredients

  • 3 cups sugar
  • 1 cup salad oil
  • 4 eggs (at room temperature)
  • 2 cups canned pumpkin
  • 2/3 cup water
  • 3 1/3 cups flour
  • 2 te baking soda (make sure it hasn’t expired)
  • 1/2 te salt
  • 1 te cinnamon
  • 1 te ground nutmeg

Preparation

Step 1

PREHEAT OVEN AT 350 DEGREES

1. Using a mixer, combine sugar and oil and cream.

2. Add eggs one at a time mixing at medium speed for 5 minutes.

3. Sift dry ingredients.

4. At low speed, add dry ingredients alternating with the water (a small amount each time until all are used up.

5. Add the pumpkin at low speed and mix well.

6. Bake for 75 minutes. I generally test for doneness with a wooden skewer at 70 minutes. If it comes out clean, I take it out then.
