This recipe originated in North Dakota. Dad’s mom made it whenever she would come to visit us. It’s a great all in one meal on a cold winter day.

Ingredients

  • 2 lbs. of ground beef
  • 2 eggs
  • 1/2 cup flour seasoned with salt and pepper to taste
  • 1/4 cup of oil
  • 1 grated onion
  • 2 medium onions chopped
  • 2 cups of cut up carrots
  • 1 large and 1 small can of chopped tomatoes
  • 2 stalks of celery, chopped
  • 1 1 lb. bag of frozen peas
  • 4 potatoes
  • butter, milk, salt and pepper
  • 1/4 cup water

Preparation

Step 1

1) Combine the meat, eggs and grated onion. Form into balls.
2) Roll the meatballs in the seasoned flour.
3) Heat the oil and brown the meatballs in the pan.
4) Remove the meatballs, pour off the fat, add the water to the pan, scrape any drippings then brown the onions in the pan.
5) Transfer the onions to an ovenproof casserole.
6) Combine the carrots and tomatoes with the onions and top with the meatballs.
7) Bake at 350 degrees for 30 minutes.
8) Add the celery and peas and bake, uncovered at 275 degrees for 2 or more hours.
9) Prepare mashed potatoes and serve with meatballs on top.
