Grandma's Brisket

When making this, there are NO absolutes! Each time I make it, I seem to make changes. I usually make it for Chanukah and Passover. This recipe is made for our whole family so there are at least 9 servings usually with leftovers.

Ingredients
- 6 to 7 pounds of brisket ( Costco is the best). Trim fat.
- 1 bottle of chili sauce
- 3 bay leaves
- 4 large onions, chopped
- 1 can of beef bouillon
- 2-3 pounds of baby carrots
- 1/2 cup water
- 1-2 tb. oil
- Garlic powder and pepper to taste
- OPTIONAL INGREDIENTS
- Dried apricots and prunes
- Additions to the sauce include 2 tb. Worchesteshire sauce, 3 tb. brown sugar, 1 cup of beer (delete water if this is added), 1 1/2 tb lemon juice.

Preparation
Step 1
Preheat oven to 300 degrees.
1) Heat oil in bottom of heavy pan and brown meat on both sides sprinkling garlic powder and pepper on each side.
2) Remove meat from pan, pour off any fat, pour a little bit of
water into pan and scrape drippings.
3) Add a small amount of oil to pan and brown onions.
4) While browning onions, combine chili sauce, beef bouillon, bay leaves, water and the optional ingredients if you want them. If adding beer eliminate the water.

Place the meat back in the pan over the onions and pour sauce over it.
5) Microwave carrots for 6 minutes then add to pan spooning some of the sauce over them.
6) Cover and cook for about 4 hours. Check at 3 hours with a fork. If it goes in easily then meat is done. If not, keep on cooking.
7) Take meat out of pan, remove any extra fat and let cool. When cool, wrap in foil and refrigerate or freeze.
8) Refrigerate sauce overnight.
10) The next day, scrape off fat that solidified on the sauce.
11) If freezing the meat, freeze the sauce in a different container.
Thaw meat and sauce in refrigerator 1-2 days before serving
Slice the meat across the grain and place in an ovenproof
dish. Cover with the sauce and bake uncovered for at least ½
hour at 325 degrees.
12) If not freezing it, slice cooled meat, place in ovenproof dish,
cover with sauce and bake uncovered for at least ½ hour, 325
degree oven.
