The addition of buttermilk means these waffles are not too sweet, making this a great all-purpose recipe. If you don?t have buttermilk, you can substitute whole milk slightly curdled with vinegar (see Note).

Ingredients

  • 2 large eggs
  • 1 1/2 cups buttermilk (see Note), plus more as needed
  • 1/2 cup unsalted butter, melted, or 1/2 cup canola oil
  • 1 1/2 cups all-purpose flour
  • 2 Tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

Step 1

In a medium bowl, whisk together the eggs, buttermilk and butter.

In a large bowl, mix the flour, sugar, baking powder, baking soda and salt. Make a well in the center of the dry ingredients, then pour in the egg mixture. Whisk until mostly smooth, with just a few lumps. If the batter seems like it is too thick, stir in another 1-2 tablespoons buttermilk.

Note: For the buttermilk, you can substitute 1 1/2 cups whole milk combined with 1 1/2 tablespoons distilled or white wine vinegar; let sit 10 minutes to sour and slightly curdle the milk.

Makes 4-8 waffles.
