Ingredients
- 1 1/2 lb small red skinned potatoes, cut into 1/2 inch thick slices
- 3 tbs olive oil
- 1/2 cup shredded Parmesan
- 1/4 cup each dry bread crumbs and minced fresh parsley

Step 1
Preheat oven to 375° with a baking sheet inside. Toss potatoes with oil in a bowl. Combine Parmesan, bread crumbs and parsley; toss mixture gently with potatoes until coated. Arrange ottos on preheated baking sheet. Bake until potatoes are tender; 30-35 minutes.
