This uses FIELD ROAST MEATLOAF, but could use any fake meat, which my wife prefers I call "Cruelty Free Meat". VERY tasty. I had it for breakfast just a few minutes before posting this. Delicious.
I'd say these portions make two large sandwiches. Great for breakfast, lunch or dinner really.

Ingredients
- Four slices of Field Roast meatloaf cut into small pieces.
- 3 or 4 baby potatoes sliced into bite sized pieces, mixed colors if you can.
- One or two inches of zucchini shredded
- Half a cup of sliced onions, bite sized
- two or three cloves of garlic sliced thinly
- a few leaves of baby spinach
- 2 tablespoons of stone ground mustard
- seasoning. I used a house blend spice from my local deli.
- Pocket bread, toast, english muffins, bagels, whatever.

Preparation
Step 1
Saute onions and garlic in a bit of olive oil to taste.
add shredded zucchini, fake meat, and potato and toss with spices in saute pan.
Fry until potatoes are cooked with a light golden color.
Place inside pocket bread that has a light/heavy spread of stone ground mustard.
Tuck in a few spinach leaves for health and color
Add some cheddar cheese and toast upright in a toaster oven if you desire.
Serve warm and steaming.
It’s delicious.
