Ingredients

  • 4 bell peppers, any color
  • 1 pound ground turkey breast
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 roma tomatoes, seeded and chopped
  • 1/4 cup egg substitute
  • 1 tablespoon Worchestershire sauce
  • Pinch crushed red pepper flakes, or
  • to taste
  • Salt and pepper to taste
  • Cut off tops of peppers and remove
  • seeds and membranes. Reserve tops. Place peppers in pot of salted boiling water
  • and parboil for 3-4 minutes. Remove and drain.
  • Chop reserved pepper tops and place
  • in large bowl. Add remaining ingredients and stir to combine.
  • Slice small pieces off bottoms of
  • peppers if necessary for them to stand upright.
  • Fill peppers with mixture. Place in small,
  • deep baking dish coated with cooking spray. Cover loosely with foil and bake 20
  • minutes at 350. Remove foil and bake uncovered for 15 minutes, until turkey is
  • cooked through.
  • If desired, top with salsa or diced
  • canned tomatoes that have been heated and drained.
  • Makes four servings.

Preparation

Step 1
