  • 852 g Hazelnuts (toasted and chopped)
  • 336 g Milk Chocolate
  • 224 g Honey
  • 536 g Sugar
  • 208 g Corn Syrup
  • 696 g Cream
  • 11 Gelatin Sheets



Step 1

-Bring sugar and corn syrup to carmelization. Deglaze with cream.
-Add gelatin.
-Pour over chocolate, hazelnuts, and honey. Stir to incorporate.
-Pour filling into a pre-baked sweet dough shell, allow to set.
