Milk Chocolate Hazelnut Tart

- 852 g Hazelnuts (toasted and chopped)
- 336 g Milk Chocolate
- 224 g Honey
- 536 g Sugar
- 208 g Corn Syrup
- 696 g Cream
- 11 Gelatin Sheets
-Bring sugar and corn syrup to carmelization. Deglaze with cream.
-Pour over chocolate, hazelnuts, and honey. Stir to incorporate.
-Pour filling into a pre-baked sweet dough shell, allow to set.
