Waffles: Belgian Waffle Batter

This is a basic version of a Belgian waffle batter. The main difference between this batter and a classic waffle batter is that the egg whites are whipped separately, which adds a little more volume and lightness.

Ingredients
- 3 large eggs, separated
- 1 1/2 cups whole milk
- 1/2 cup unsalted butter, melted
- 1 1/2 teaspoons pure vanilla extract
- 1 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3 tablespoons sugar

Preparation
Step 1
In a medium bowl, mix together the egg yolks, milk, butter and vanilla.
In a large bowl, mix together the flour, baking powder and salt.
In the bowl of a stand mixer using the whisk attachment, whip the egg whites on medium-high speed until soft peaks form, about 3 minutes. Add the sugar and whip until firm peaks form, 2-3 minutes.
Make a well in the center of the dry ingredients ad pour in the milk mixture, stirring until just combined. Gently fold in the egg whites.
Makes 6-10 Waffles
