Ingredients
- 16 oz uncooked penne or other short pasta
- 4 pancetta slices or thick bacon slices
- 1 T butter
- 1 T EVOO
- 2 shallots, chopped
- 1 clove garlic, minced
- 1/4 t dried crushed red pepper
- 1/2 c vodka
- 1/2 c chicken broth
- Two 14.5 oz can fire roasted diced tomatoes, undrained
- 8 oz can tomato sauce
- 3/4 t salt
- 1/4 t fresh ground pepper
- 1/2 c heavy whipping cream
- 2 T chopped fresh basil
- Garnishes: Parmesan cheese shavings, fresh basil leaves
Preparation
Step 1
Prepare pasta according to pkg directions. Meanwhile cook pancetta in lg nonstick skillet over med high heat until crisp. Remove pancetta & drain on paper towels. Wipe skillet clean.
Melt butter in lg skillet over med high jest. Stir in oil, shallots, garlic & red pepper; sauté 3-4 min until shallots are tender. Stir in vodka; bring to boil, reduce heat & simmer 3 min until reduced by 1/2. Stir in broth & next 4 ingredients. Simmer 15 more min
Reduce heat to low; stir in cream, basil & pancetta. Cook 2 min until heated through. (Do Not Boil.). Spoon pasta into serving bowls; top with sauce. Garnish, if desired. Makes 4 entree or 8 side dish servings.
