  • 2 Tbl Butter
  • 1 small onion chopped
  • 1 clove garlic chopped
  • 1/4 tsp rubbed marjoram
  • 1/4 tsp dried summer savory
  • 4 oz pearl barley washed
  • 1 medium carrot diced
  • 1 celery stock diced
  • 8 generous cups chicken stock
  • 1 1/2 oz smoked bacon rind
  • 8 oz chicken meat
  • 1 Tbl oil
  • Salt/ pepper
  • 1 leek thin sliced
  • 1 scallion
  • 3 Tbl roasted onions

Step 1

Melt half butter in large pot and glaze onions and garlic. Add marjoram, savory,barley, diced vegetables and simmer briefly. Pour in chicken stock an
Add bacon rind and bring to boil. Cover and simmer gently for 10 minutes. Cut chicken meat into small pieces sauté in oil and add to stew. Season to taste with salt & pepper and simmer for 10 minutes.

Sauté leek and scallion in remaining butter add to stew and bring to boil. Sprinkle roasted onions in and serve.
