Ingredients

  • 2 tbs flour
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 boneless, skinless chicken thighs
  • 1 tbs oil
  • 1 cup sliced onions
  • 1 tsp minced fresh garlic
  • 1/4 cup dry white wine
  • 1 can tomato puree (10.75 oz)
  • 1 cup chicken broth
  • 2 tsp minced fresh thyme
  • 1 tsp dried Italian seasoning
  • 1/4 tsp red pepper
  • 2 cups sliced button mushrooms

Step 1

Combine flour, salt and pepper. Dredge chicken in flour mixture. Reserv excess. Heat oil in a saute pan. Add chicken and cook until browned, 3 minutes per side. Transfer chicken to a plate. For the sauce, sauté onions and garlic in same pan, 2 minutes. Stir in reserved flour mixture; cook 1 minute. Add wine and cook until it is absorbed. Stir in tomato puree, broth, thyme, Italian seasoning and pepper flakes. Add mushroom and return chicken to pan. Cover pan and reduce heat to low and simmer sauce until mushrooms and chicken are cooked through, 20 minutes. Season cacciatore with salt an deeper. Garnish with Parmesan.
