  • Rib-eye steaks, at least 1-inch thick
  • Salt, pepper and Montreal Steak Spice
  • 1/4 cup olive oil
  • 2 cloves garlic, crushed
  • 1 small sprig fresh rosemary, minced
  • 1 tsp. coarse salt

Step 1

Season the steaks with salt, pepper and steak spice. Cover loosely and let sit on the counter for a while in order for the seasoning to soak in and for the steaks to come close to room temperature. Meanwhile, combine the olive oil, garlic, rosemary and salt in a small bowl.

Heat the grill to medium-high heat. When the grill is hot, brush the grate with some olive oil. Put the steaks on the grill and cook the first side just until you see the blood and juices begin to come to the surface (for a medium rare steak). Flip the steaks and continue to cook for about the same amount of time as the first side took. As soon as you see the juices begin to surface again, quickly brush the steak with the olive oil mixture, flip and brush the second side then flip back. Let sit for about 10 seconds then remove to a plate. Cover the steaks loosely with foil and let sit for 5-10 minutes before serving.
