Ingredients

  • 16 oz Fideo (or thin cut spaghetti)
  • 2 lb medium shrimp (peeled and deveined)
  • 2 TBS olive oil
  • 2 cups chardonnay wine
  • Juice from 1 lemon
  • 2 tsp Italian seasoning
  • 1/2 cup butter
  • 1 TBS parsley
  • 1 cup grated Parmesan
  • 1/4 cup Italian bread crumbs

Step 1

Cook pasta to al dente. Drain.

Heat medium skillet over medium heat. Add 1 TBS olive oil. Cook half the shrimp until no longer pink. Remove from pan. Add 1 TBS olive oil to pan. Cook the other half of the shrimp until no longer pink. Remove from pan. Add garlic. Cook 2-3 minutes. Do not brown. Add wine and lemon juice. Reduce by half. Add Italian seasoning and butter. Cook until butter is melted. Turn off heat. Stir in shrimp and parsley. Season with kosher salt to taste.

Preheat oven to 350 degrees. Spray a 2qt glass baking dish with olive oil cooking spray. Pour pasta into baking dish. Pour shrimp scampi over pasta and stir to coat. Stir in Parmesan cheese. Sprinkle bread crumbs over the top. Bake 20-30 minutes or until bread crumbs are golden brown.
