Oatmeal-Raspberry Bars

Ingredients
- 10 tablespoons cold unsalted butter, cut into pieces.
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/4 teaspoon kosher salt
- 1/4 cup rolled oats
- 1/2 cup seedless raspberry jam
- 1 cup fresh raspberries

Preparation
Step 1
Heat oven to 375 degrees. Grease an 8-inch square baking pan.
In food processor pulse flour, sugar, and salt to combine. Add butter and pulse until dough comes together. Transfer to bowl and gently knead in oats.
Press all but 1/2 cup of dough into prepared pan. Spread jam evenly over dough, leaving 1/4 inch border around the edges. Scatter the raspberries over the jam and sprinkle with remaining dough.
Bake until edges are golden, about 25 to 28 minutes. Let cool 10 minutes before slicing into bars.
