Brie Pie

Ingredients
- 1 small yellow bell pepper, seeded and sliced
- 1 small red bell pepper, seeded and sliced
- 2 tablespoons butter
- 1 partially baked 9-inch butter pastry shell (see onion pie recipe)
- 1/4 pound Brie cheese
- 3 eggs
- 1 cup heavy whipping cream
- 1 teaspoon salt
- 1/8 teaspoon white pepper
- 1/8 teaspoon nutmeg
- thinly sliced glavlax, ham or smoked meat for garnish
- olives for garnish

Step 1
Preheat the oven to 400 degrees.
In a skillet, over low heat, saute the slice bell peppers in the butter for 20 minutes, or just until tender. Turn the peppers into the partially baked pastry crust.
Cut the Brie into 1/2-inch wedges. Place on top of the bell peppers with one of the cut sides up, in a pinwheel fashion.
In a medium-sized bowl, beat the eggs, cream, salt, white pepper and nutmeg until well-blended. Pour the egg mixture over the Brie and peppers in the pie shell.
Bake for 10 minutes, reduce the temperature to 350 degrees and continue baking for about 30 minutes, or till the center of the pie is just set. Cool for about 10 minutes before slicing. This can be served warm or cold. Garnish each slice with gravlax or meat that has been rolled into cornucopias, and olives.
