Cream Cheese Potato Soup

Ingredients

  • 20 cups chicken broth
  • 20 cups peeled and cubed potatoes
  • 1 1/4 cups minced onion
  • 2 1/2 teaspoons seasoning salt
  • 1 1/4 teaspoons white pepper
  • 1 1/4 teaspoons ground red pepper
  • 1 (40 ounce) package cream cheese, cut into chunks

Preparation

Combine broth, potatoes, onion, and spices.

Boil on medium heat until potatoes are tender.

Smash a few of the potatoes to release their starch for thickening.

Reduce to low heat.

Add cream cheese.
