Ingredients

  • 1 1/2 sticks soft butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1 teaspoon baking soda
  • 2 1/2 cups oats
  • 10 ounce package white chocolate chips
  • 1/4 cup chopped dried apricots

Step 1

Preheat oven to 375 degrees. Cream butter and sugars. Add eggs and beat until fluffy. Combine dry ingredients, and add to egg mixture. Stir in oats and white chocolate chips. Blend in apricots. Drop from rounded teaspoon as loosely formed balls, spaced about 2" apart, on an ungreased cookie sheet. Bake 7 to 9 minutes, until just lightly browned. Cool slightly before removing from cookie sheet, then continue cooling on rack. Cool cookie sheet completely before adding next batch of cookie dough. Recipe makes about 3 dozen cookies.
