Pineapple Bread Pudding
This excellent bread pudding is like a cross between a chess pie and a pineapple upside-down coffee cake. For best results, use either slightly dry artisan bread, or a fairly fresh quality white bread, such as Bunny brand.

Ingredients
- 2 cups sugar
- 3 beaten eggs
- 1/2 cup cream or milk
- 1 teaspoon vanilla
- 1/2 cup melted butter
- 4 cups crustless bread, cubed
- 1 small can crushed pineapple,
- drained of juice
- ( may also use
- chunked or sliced pineapple )

Step 1
Preheat oven to 350 degrees. Butter a 9" square baking dish. Combine sugar, eggs, cream, butter, vanilla, and bread cubes. Let stand 5 minutes. Add pineapple. Pour into buttered dish. Bake 45-60 minutes, until bubbly and golden brown.
