Best-of-All Pecan Pie

A classic all-American pecan pie. It goes together quickly and with only a few ingredients. Even though I'm in the west, I have the privilege of using southern pecans from my uncle's trees in South Carolina. I coarsley chop the nuts as the pie is easier to cut that way.

Ingredients
- 3 Eggs
- 1 cup Dark Corn Syrup
- 1/2 cup Dark Brown Sugar
- 4 tblsp Butter, melted
- 1 tsp Vanilla
- 1 1/4 cup Pecans

Preparation
Step 1
Preheat oven to 425° and line pie pan with pastry dough and set aside.
Beat eggs until well blended. Add the corn syrup, brown sugar, melted butter, and vanilla, and blend well. Stir in pecans and pour into pie shell.
Bake at 425° for 15 minutes, then reduce to 350° and bake another 20 minutes, or until edges are set and the center quivers slightly.
Don’t overbake!
