Ingredients

  • 1 pkg. Filo dough
  • 1 cup oil (to fry)
  • 1 lb soft white cheese (such as Feta)
  • 1/2 cup chopped parsley
  • 1 egg (beaten)

Preparation

Step 1

Mash cheese, add finely chopped parsley and beaten egg.

Spread filo on counter, cut into 5 inch strips. Take two layers of the strips together and put two teaspoons of the filling on the two layers of the filo strip and spread a long the length and roll into a cigar shape. Wet the edge slightly to stick. Make as many of these cigars as you need. One packet of filo dough will make about two dozen.

Cover with a dish cloth and begin to fry in hot oil about six to eight at a time if pan is large perhaps a dozen at a time. Serve while hot and crisp.

Variation:
Cut filo dough into four inch wide strips, again take two layers at a time and put two teaspoons of filling on one end. Spread it as a triangle and begin to fold into triangle shapes and fry in hot oil until golden.
