Grandma's Zucchini Bread

Ingredients
- 3 c. all-purpose flour
- 1 t. salt
- 1/4 t. baking powder
- 1 t. baking soda
- 1 T. cinnamon
- 3 eggs
- 1 c. oil
- 2 t. vanilla extract
- 2-1/4 c. sugar
- 2 zucchini, shredded
- 1/2 c. chopped walnuts

Preparation
Step 1
Sift flour, salt, baking powder, baking soda and cinnamon together; set aside.
Beat eggs, oil, vanilla and sugar together; add to flour mixture and blend well. Stir in zucchini and nuts until well combined.
Pour batter into 2 lightly greased 8"x 4" loaf pans. Bake at 325 degrees for 55 to 65 minutes. Cool in pans on a wire rack for 20 minutes. Remove from pansand cool.
Makes 2 loaves.
