Norwegian Celebration Cream Pudding (Rommegrot)

In some parts of Norway, it is traditional for wedding guests to bring a large bowl of rommegrot as a sort of "entry ticket" to the celebration. At the reception, the puddings are lined up for the guests to compare. Although Norwegians consider rommegrot a main dish, this pudding makes a wonderful dessert with served with a sprinkling of cinnamon and sugar.

Ingredients

  • 2 cup heavy whipping cream
  • 3/4 cup flour
  • 2 cups milk
  • dash of salt
  • cinnamon and sugar, for serving

Step 1

In a heavy-bottomed saucepan, bring the cream to a boil. Boil for 2 minutes, then add half the flour, whisking until it is well-blended. Skim off and reserve the butter that is rendered off of the mixture. (The rendered butter will look like clarified butter.) Add the remaining flour, one tablespoon at a time. Stir in the milk. Simmer, whisking, for 5 to 6 minutes, until the pudding is very smooth. Cover and cool.

Serve with the reserved warm butter and cinnamon and sugar to sprinkle over the top.
