Ingredients

  • 1 1/2 lb skirt steak or boneless skinless chicken thighs cut into thin strips.
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. garlic powder
  • 1/4 tsp. chili powder
  • 1/4 tsp. cumin
  • 2 Tbsp. vegetable oil
  • 1/2 red bell pepper, sliced length wise
  • 1/2 green bell pepper, sliced length wise
  • 1 small onion, thinly sliced
  • 1 tbsp. soy sauce
  • 1 tsp. brown sugar
  • 1/4 tsp. hot sauce
  • 6 large flour tortillas, warmed
  • 1 avocado (optional)
  • 1/2 cup sour cream (optional)

Step 1

1. Place the sliced steak or chicken in a large bowl. Add the salt, pepper, garlic powder, chili powder and cumin and toss until meat is well coated.

2. pour the oil into a large skillet that has been heated over high heat. Add the bell peppers and onion and cook until softened, about 4 minutes. remove to a plate.

3. using the same skillet, quickly brown meat, about 1 minute per side. add vegetables back to the skillet and add soy sauce, brown sugar and hot sauce. stir together quickly and remove from heat.

4. spoon the meat mixture into the warm tortillas and garnish with avocado slices and sour cream, if desired.

*Stretch your dollar: Extend your meat by adding 1 (15 oz) can of drained black beans into the pan with the cooked vegetables in step 3.

* leftover magic: the leftover meat mixture can be turned into enchiladas. roll meat and veggies into corn tortillas along with some cheddar cheese and place into casserole dish. pour canned enchilada sauce over and top with more cheese. bake until bubbly, about 25 min.
