Ingredients

  • 3 large oranges
  • 1 cup margarine or butter (2 sticks) softened
  • 1 cup regular farina
  • 1 cup ll-purpose flour
  • 2 tablespoons baking powder
  • 1/4 teaspoon salt
  • 6 large eggs
  • 1 cup pecans or walnuts, finely chopped
  • 1/4 cup honey
  • 1 tablespoon lemon juice

Preparation

Step 1

Preheat oven to 350 degrees. Grease 12" x 8" baking dish. From orange, grate 1 tablespoon peel and squeeze 1/2 cup juice. In large bowl, heat margarine or butter and 3/4 cup sugar just until blended. Increase speed to high, beat until light and fluffy. Reduce speed to low, add farina, flour, baking powder, salt, eggs, orange peel, and orange juice, beat until well mixed, constantly scraping bowl with rubber spatula. Increase speed to high, beat 2 minutes. Stir in nuts. Pour batter into baking dish. Bake 30 minutes or until toothpick inserted in center comes out clean. Cool dessert in baking dish on rack.

When dessert is cool, prepare syrup. In 3 quart saucepan over medium heat, heat honey, lemon juice, 2 cups sugar, and 2 cups water to boiling, boil 15 minutes. Pour hot syrup over cooked cake.
