Ingredients

  • 2 cups Swedish brown beans or pinto beans
  • 5 cups water
  • 1 teaspoon salt
  • 2 teaspoons crystallized ginger, chopped
  • 1/4 cup cider vinegar
  • 1/4 cup dark corn syrup
  • 1/4 cup firmly packed brown sugar
  • 1 teaspoon ground ginger
  • Additional salt, vinegar and corn syrup (if desired)

Preparation

Step 1

Rinse the beans and put them in a large pot. Cover with water and let stand overnight.

Bring the water and the beans to a boil over medium-high heat, adding more water if necessary to cover the beans. Add the salt and crystallized ginger. Cover and let simmer for 1 1/2 hours or until the beans are tender.

Using a potato masher, crush some of the beans. Add the vinegar, corn syrup, brown sugar and ground ginger. Simmer for 30 minutes longer, or until thickened. Season with additional salt, vinegar and corn syrup, if desired.
