Ingredients

  • Combine the dry ingredients in a large bowl:
  • 2 1/4 cups gluten free flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon nutmeg, optional
  • Pinch of baking soda
  • Cut into dry ingredients:
  • 1/4 cup organic palm shortening, chilled
  • Combine the wet ingredients, then add to large bowl:
  • 3/4 cup soured milk
  • 2 tablespoons canola oil
  • 2 tablespoons applesauce
  • 2 eggs
  • 2 tablespoons pure vanilla extract

Grease donut pans (even nonstick). Fill each donut cup approximately 3/4 full. Bake 10-12 minutes at 350 degrees. Allow to cool slightly before removing from pan. To coat, dip donuts in melted butter, then roll in powdered sugar or cinnamon sugar. Makes 12-15 donuts.

Chocolate glaze
1 cup powdered sugar
4 tablespoons unsweetened cocoa powder
½ teaspoon corn syrup
½ teaspoon pure vanilla extract
2 or 3 tablespoons water or coffee

Donut Baking Tips

A combination of gluten free flours usually gives the best result. Pick up a ready to use flour blend or use your favorite all-purpose mix. Make your own rice flour blend by combining 6 cups brown rice flour, 2 cups potato starch, and 1 cup tapioca starch in a large container. Blend well. Use this in recipes calling for a gluten free flour blend.

Using ½ cup of almond meal as part of your total flour mixture in this recipe will add moisture and enhance the texture of your donuts.

To sour hemp, almond, dairy or any kind of milk, pour 2 teaspoons of apple cider vinegar into a measuring cup and add milk to measure ¾ cup. Stir and let sit for about 10 minutes.
