Wonderful Bean Soup

Ingredients

• 1 bag of 15 bean soup mix
• 1 quart tomato
• 1 chopped onion
• 2 stalks chopped celery
• 1 chopped green pepper
• 1 package sweet italian sausage

Preparation

Step 1

Wash beans, soak 2 cups of beans for 2 hours. Use enough water to cover the beans. Bring to a boil, then cover and let sit for 2 hours.

Drain the water. Add 8 cups water. Boil 2 hours or until beans are tender.

Add tomato, onion, celery, pepper and sausage. Make sure the sausage is in small pieces.

Cook for 1 more hour. Add salt and pepper to taste.
