Quick Chocolate Snack Cake

Ingredients

• 1/3 cup prune baby food or unsweetened applesauce
• 1 cup sugar
• 1/2 cup sugar blend
• 1/2 cup egg substitute
• 1/2 cup water
• 1/3 cup canola oil
• 1 teaspoon vanilla extract
• 3/4 cup baking cocoa
• 2/3 cup all-purpose flour
• 2/3 cup whole wheat pastry flour
• 1/2 teaspoon baking soda
• 1/4 teaspoon salt
• 1/2 cup semisweet chocolate chips

Preparation

Step 1

In large bowl, beat baby food, sugar, sugar blend, egg substitute, water, oil and vanilla until well blended. Combine cocoa, flours, baking soda and salt; gradually beat into prune mixture until blended. Transfer to 13x9 in. baking dish coated with cooking spray.

Bake at 350° for 20-25 minutes or until toothpick inserted near center comes out clean. Sprinkle with chips. Cool on wire rack.
