Ingredients

  • 4 whole heads of garlic
  • 4 Tb. olive oil
  • salt and pepper
  • 4 Tb. grated parmesan cheese
  • 1/2 tsp. saffron threads

Step 1

Slice the top half-inch from the heads of garlic. Remove some of the papery skins from the outside, keeping the head intact. Place in the garlic baker; drizzle each with 1 Tb. olive oil and sprinkle lightly with salt and pepper. Cover and bake for 1 hour in a 275 degree oven. Uncover, baste with the oil in the dish, and sprinkle each with 1 Tb. parmesan and few saffron threads. Cover and bake 1 hour more or until tender. Serve warm by squeezing garlic cloves out of their skins onto crisp crackers or sliced baguettes and spreading with a knife.
