Watercress & Mango Salad with Ginger Dressing

Ingredients
- 2 T olive oil
- 2 T minced ginger
- 2 T lime juice
- 1 T rice vinegar
- 1/2 t chili paste or Tabasco
- 1/2 t minced garlic
- Pinch of salt
- 1/2 t sesame oil
- 1/4 C olive oil
- Salt & pepper
- 2 T chopped cilantro
- 1 thinly sliced scallion
- 3 bunches of watercress
- 1 small red onion, thinly sliced
- 1 avocado cut in 1/2" dice
- 1 mango cut in 1/2" dice

Preparation
Step 1
1. Heat olive oil in small skillet. add ginger & cook over mod. heat til golden, @ 2 min. Transfer ginger to small bowl & let cool. Stir in lime juice, rice vinegar, chili paste, garlic, sugar & sesame oil. Slowly whisk in the 1/4 C olive oil; season with salt & pepper. Stir in cilantro & scallion.
2. In large bowl, toss watercress & onion with dressing & season with salt & pepper. Add mango & avocado, toss gently & serve.
