Ingredients
- 1 green pepper, thinly sliced
- 1 red pepper, thinly sliced
- 1 yellow pepper, thinly sliced
- 1/2 onion, thinly sliced
- 1/3 c. margarine
- 1/2 t. cumin
- 8-oz. pkg. cream cheese
- 8-oz. pkg. shredded sharp Cheddar cheese
- 1/2 c. fresh Parmesan cheese, grated
- 10 6-inch flour tortillas

Preparation
Step 1
Saute peppers and onions in margarine in 12" skillet until tender; stir in cumin. Drain; reserve drippings. Blend cheese on medium speed in small mixing bowl until well mixed; spoon 2 tablespoons cheese mixture onto each tortilla. Top with pepper mixture; fold tortillas in half and place on baking sheet. Brush tops with reserved drippings; bake at 425 degrees for 10 minutes. Slice each tortilla into thirds to serve. Makes 30 servings.
