Ingredients

  • 8 ounces white mushrooms or mixed mushrooms sliced (such as white mushrooms and shiitake)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly-ground black pepper
  • 8 slices white or whole-wheat bread toasted
  • 1/4 cup light mayonnaise
  • 4 leaves lettuce
  • 4 tomato slices
  • 2 tablespoons crumbled cooked bacon (jarred bacon bits may be substituted)

Preparation

Step 1

Coat a large skillet (preferably nonstick) with cooking oil spray; heat over medium heat. Add mushrooms; cook and stir until tender, about 10 minutes. Season with salt and pepper.

Toast bread; spread one side of each slice with mayonnaise. Top four slices with lettuce, tomato and the mushroom mixture; sprinkle bacon bits on top, dividing evenly. Top with the remaining slices of toast.

This recipe yields 4 servings.
