Ingredients
- Pineapple Relish
- 1 cup Very finely diced sweet pineapple
- 1 tablespoon lime juice
- 2 scallions minced
- 1 red or green jalapeno seeded and minced
- 1/4 teaspoon kosher salt
- Shrimp
- 3 tablespoons sweet white miso
- 2 tablespoons hot water
- 2 tablespoons brown sugar
- 1 1/2 tablespoons chili-garlic sauce or chili paste
- 1 tablespoon soy sauce
- 1 tablespoon rice wine vinegar
- 24 shrimp deveined with tail shells

Preparation
Step 1
Pineapple Relish
Combine and set aside. Cover and refrigerate. (you can add a chopped red pepper)
Shrimp
Whisk together first 6 ingredients. Add shrimp, toss to coat; marinate in refrigerator for at least 1 hour.
soak 8 bamboo skewers in water.
Alternate shrimp and pineapple chunks on skewers. Grill 2 1/2 minutes per side.
Serve with rice.
