Sara's Peanut Butter Chicken for Two

Sara's Peanut Butter Chicken for Two 0 Picture


  • 2 large skinned and deboned chicken breasts - diced
  • 1 large onion slices - sliced
  • 1 tbps smooth peanut butter
  • 1 heaped tsp ground cumin
  • 1 heaped tsp ground coriander
  • 1.5 cups chicken stock
  • Salt and black pepper


Preparation time 10mins
Cooking time 30mins


Step 1

1. Halve the onion and slice thinly
2. Fry the onion till golden then set aside
3. Dice the chicken breasts and fry until partially cooked
4. Add the onion back to the pan
5. Sprinkle the cumin and coriander over the chicken and onions and stir in. Add salt and black pepper to taste
6. Add the peanut butter and stir in - make sure everything is well coated in peanut butter
7. Pour over the chicken stock, stir and cover the pan
8. Simmer on a low heat for approximately 15 - 20 mins, stirring regularly to avoid catching.

Serve on a bed of rice and steamed spinach
