HGers KNOW that one of our favorite things to do is lighten up shakes, blended coffee drinks, and smoothies. I've been doing this for decades and I LOVE IT. The key is to replace a whole bunch of fattening stuff with not-so-fattening stuff. Your drinks will be DELICIOUS if you use the right items. For a pumpkin shake, I'd use a combo of light vanilla soymilk or Unsweetened Vanilla Almond Breeze (about 1/2 - 3/4 cup), Splenda (2 packets or so), a few tablespoons of canned pure pumpkin, maybe a little vanilla extract (just a drop or 2), some cinnamon and/or pumpkin pie spice, and lots of ice (crushed is best). If you want it super-thick and decadent, you can add a few tablespoons of light vanilla ice cream. (Try to use one of the slow-churned or double-churned kinds.) Th en I'd top it all off with Fat Free Reddi-wip. That shake would have about 70 - 120 calories (POINTS® value 2 - 3*), depending on exactly what you use. Play around with it! Other ingredients to think about including are sugar-free vanilla syrup (Torani makes the best!) and fat-free or sugar-free Coffee-mate flavored powders (use about a teaspoon, and dissolve it in a bit of warm water first). Sugar-free vanilla pudding (a little instant pudding mix or some pre-made pudding) is another fun item to add. So shake things up!!! And let me know how it turns out...
