- 1 Lb Unsalted Butter, Softened
- 1 C Sugar
- 6 Egg Yolks
- 1 Tbs Vanilla
- 2 Drops Yellow Food Coloring
- Zest of 2 Lemons
- 5 Cups All-Purpose Flour
- 1 Egg

Step 1
Preheat oven to 325 degrees.
Cream together butter and sugar. Add egg yolks, vanilla, food coloring, and lemon zest and mix well. Gradually add flour while stirring. Chill for 1 hour. Roll out ¼ inch thick and cut into shapes. Beat remaining egg, brush each cookie with beaten egg. Place on parchment-lined baking sheet.
Bake for 24 minutes, or until slightly golden.
