Ingredients

  • 4 oz butter
  • 8 oz bacon
  • 1 large onion (finely diced)
  • 2 stalks celery (finely diced)
  • 4 large potatoes (cubed)
  • 2 large carrots (sliced)
  • 2 cups half and half
  • 2 cans evaporated milk
  • 2 cups fish stock
  • 2 tsp sea salt
  • 1 tsp black pepper
  • 2 pounds seafood (I used snapper, scallops, shrimp and clams)

Step 1

Cook bacon till crisp. Drain fat off. Add butter, onions and celery and cook till onions are clear. Add all raw seafood and cook for 3 minutes. Then add any cooked seafood and season with salt and pepper. Cook an additional 2 minutes. Add fish stock and bring to boil. Add potatoes, evaporated milk and half and half. Do not boil - bring to a simmer and add potatoes and carrots. Simmer gently for 30 minutes.
