  • 2 tablespoons butter
  • 2 tablespoons vegetable oil
  • 1 pound red potatoes, scrubbed and cut into 1/2-inch cubes
  • 1 medium onion, chopped

Preparation

Step 1

Pour 1 cup of water into a skillet. Turn heat to medium-high. Add the butter and oil and bring to a boil.

Place the potatoes and onion into the boiling water. Cover and cook 10 minutes, stirring occasionally. Uncover and cook for another 10 minutes, letting the water evaporate.


Let the potatoes brown before turning them. Then flip them every few minutes so they brown evenly.


Cook until potatoes are cooked through, browned and crispy on all sides. Serve immediately.



Variation:

Use the same technique, but add a little fresh chopped rosemary, parsley, garlic & diced red bell pepper at the end of step 3 for colorful herb & garlic-flavored home fries.
