Ingredients

  • 2 (2-3 lb.) broiler fryer chickens, cut up
  • 2 cups salad oil
  • 2 eggs, beaten
  • 1 tsp. oregano
  • 1 tsp. rosemary
  • 1 tsp. tarragon or poultry seasoning
  • 1 tsp. paprika
  • 2 cloves garlic, crushed
  • 2 cups flour
  • Salt and pepper
  • Hot salad oil

Step 1

Place chicken in a 13x9x2 inch pan. Combine 2 cups salad oil, eggs, oregano, rosemary, tarragon, paprika, and garlic; pour over chicken, turning to coat both sides. Refrigerate 2 hours; remove chicken from marinade.

Season flour with salt and pepper. Lightly salt chicken pieces, and dredge in seasoned flour. Heat 1 inch of salad in a skillet over medium heat. Place chicken in skillet; fry over medium heat 30 minutes, turning occasionally. Drain on paper towels.

Yield: 10 to 12 servings.
