Diabetic-Friendly Cheesecake 1 Picture

Ingredients

  • 1/4 cup brown sugar (or Splenda)I use Whey Low brown sugar
  • 1 1/4 cup Graham Cracker Crumbs
  • 3/4 cups finely chopped pecans
  • 1/3 cup melted oleo
  • 3 (8-oz) packages of cream cheese (such as Philadelphia)
  • 1 (8-oz) carton sour cream
  • 2 large eggs and 1 egg white, beaten
  • 1/2 cup sugar (or Splenda)
  • 1 tsp vanilla

Preparation

Step 1

CRUST:

Blend and press into bottom of spring form cake pan. Cook 7 minutes at 375 degrees. Cool.


CAKE:

1.Combine and mix well.

2.Pour over crust. Bake 20 minutes at 350 degrees. (The cheese cake will look soft in the middle, but it is ready to remove from the oven.)

3.Cool overnight in refrigerator before slicing.
