  • 1/2 cup cheddar cheese, room temperature, grated
  • 2 slices bread
  • 1 tablespoon butter, room temperature

Step 1

I knew exactly where I was going to start with the buffalo chicken grilled cheese sandwich and that was with a quick buffalo chicken salad. I made the buffalo chicken salad by mixing shredded chicken with some mayo, carrots, celery, red onion and and a healthy dose of hot sauce. From there I built in the grilled cheese aspects with sour dough bread, some cheddar cheese which melts nicely and a touch of blue cheese to get the dips flavours into the sandwich. I was also thinking that I could use some

in place of the mayo and the blue cheese but I wanted some nice chunks of blue cheese in the sandwich so that they would melt and get all nice and creamy and good. All that remained was to grill the sandwich up until the outside was golden brown and the cheese had melted. (Tip: One trick to help make sure that cheese melts nicely in a grilled cheese is to bring it up to room temperature before you grill the sandwich.)

Servings: makes 1 sandwich

Directions

Mix the chicken, hot sauce, mayo, carrot, celery and onion in a small bowl.

Heat a non-stick pan over medium heat.

Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side.

As always, looks super delicious! I would love to know how you prepare your bread for grilling because you always get such a great golden brown! Do you butter the bread? butter the pan? low heat? high heat? I think you could do a whole post just on your bread grilling techniques because they always look so good!

Shan Cait: I am planning on doing a post about how I grill my sandwiches! For now: I like to heat the pan to medium, melt some butter in it until it is sizzling and starting to brown, reduce the heat to one notch below medium, add one piece of bread and swirl it around in the butter, top it with the fillings and the second slice of bread, buttered. From there it is just a matter of flipping after the one side is golden brown and then grilling the other side.

I never leave comments, but I made this tonight and it was awesome. I may just have to make another one before bed. It was that good.

Simply Amazing! While waiting for the chicken to cook I mixed the other ingrediants together.. It was fantastic and would make a great dip. We ate so much of it we had to make it again and then add the chicken.

heather marie: You could just omit the blue cheese or replace it with more cheddar or some goat cheese. The ranch also sounds like a good idea.

The ranch might work. Just something to balance out the spiciness of the chicken. I'm in the process of moving and need easy meals because everything is packed, so this is on my "to make" list, haha.

Made this tonight and my boyfriend had THREE of them!! We omitted the celery, blue cheese, and carrots. We also mixed the shredded cheddar in with the chicken mixture, AMAZING!!

We made this today for lunch. We added extra hot sauce (3 TB for two sandwiches). It was a slam dunk. Yum!

I'm pregnant and I just found heaven. OMG my stomach actually hurts right now I got so hungry instantly. Off to make these sandwiches and some buffalo chicken dip (my recipe) and some tater skins. I'm gonna gain 1000 pounds with this kid but it's gonna be a spicy food loving baby.

Wow, that sounds just amazing!It would be good with added pepper jack cheese, and definitely franks red hot as the hot sauce of choice. Making me hungry!!!
