Fabulous Pizza Casserole

Ingredients

• 4 cups zucchini, shredded and thoroughly drained
• 4 cups shredded mozzarella cheese, divided
• 2 eggs
• 1 onion, chopped
• 1 1/2 lbs. Italian sausage
• 1 jar pizza sauce

Preparation

Step 1

Spray 9x13-inch pan with cooking spray. Mix drained zucchini with 2 cups mozzarella cheese and the eggs. Press into pan. Bake at 350 degrees for 15 minutes. Meanwhile, brown Italian sausage with chopped onion. When browned, add pizza sauce. Pour over top of crust. Top with remaining 2 cups of mozzarella cheese and bake 30-40 minutes until brown.

Variations: Add other pizza toppings such as mushrooms, green pepper or black olives.
