Aromatic Slow-Roasted Tomatoes

Slow roasting takes ho-hum winter tomatoes and turns out fruit with summery concentrated sweetness and intense tomato essence. Serve as a side dish alongside roast beef or lamb, seared steak, or fish. Or puree the tomatoes with an additional splash of olive oil and toss with pasta.

Ingredients
- 1 Tbsp sugar
- 1 Tbsp extra-virgin olive oil
- 1/2 tsp salt
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- 1/4 tsp freshly ground black pepper
- 4 lbs plum tomatoes, halved lengthwise (about 16 medium)
- Cooking spray

Preparation
Step 1
1. Preheat oven to 200 degrees F.
2. Combine sugar, extra-virgin olive oil, salt, basil, oregano, pepper, and tomatoes in a large bowl, tossing gently to coast tomatoes. Arrange the tomatoes, cut sides up, on a baking sheet coasted with cooking spray. Roast at 200 degrees F for 7 1/2 hours.
